Help Hicham Pursue His Culinary Dream at the Culinary Institute of America

I am reaching out to you to share the incredible story of Hicham Hnini, a talented young man from Morocco who has defied all odds to pursue his culinary dreams.

My daughter Chef Mandy Dixon and I first met Hicham several years ago during a U.S. State Department culinary education mission in Morocco, where he was cooking at a small camel rescue farm called La Fromagerie outside of Essaouira. The very next day, we ran into him again at his father's store in the market, a serendipitous encounter that felt like it was meant to be.

Hicham's journey to the United States has not been an easy one. We worked tirelessly to secure him a J-1 work visa so he could join us at our Tutka Bay Lodge in Alaska. Despite having no formal education, Hicham's determination and hard work knew no bounds. He dedicated himself to learning English, studying tirelessly to improve his language skills. His perseverance paid off, and he was able to enroll at Riverside College, where he earned the credits necessary to be accepted into the prestigious Culinary Institute of America (CIA). Hooray!

As someone who has witnessed Hicham's incredible work ethic and passion for the culinary arts, I am bursting with pride at his accomplishments. His infectious smile, his laugh, and his indefatigable positive attitude has blessed our kitchen. From the desserts of Morocco to the culinary capital of New York, Hicham's journey is a testament to the power of hard work and unwavering determination.

While working under his J1 contract, Hicham funded a well to be put into his parents home and purchased a small piece of land that he hopes to someday operate a riad. Pretty amazing.
