Hello, my name is Judi Valentin and I was born with health complications (collapsed lung, severe asthma, jaundice, immunocompromised, allergies, etc.) and was given a one year life expectancy. Fortunately, I’ve been given 20 extra years, though not without a fight. Due to my health issues, I’ve never really been able to find stable employment, and I’ve decided I want to change that. My dream is to open a Puerto Rican Cafe- the first one in Green Bay- with my mother. She also has her own health complications (Diabetes, neuropathy, fibromyalgia, arthritis, etc.) and hasn’t been able to work. We want to spread our culture and traditions, share Puerto Rico’s amazing cuisine and coffee, and expand Green Bay’s food scene.
