On Wednesday, we lost a beautiful lady from a sudden health episode. The community is reeling from this as she was a pillar in our area as owner and operator of Pikes Liquor on Voyager Parkway in Colorado Springs. She and her husband, Humberto, opened the shop the day before COVID shut down the entire world in 2020, and while they stayed open, they struggled to get established in the area in their first year. They endured and with the support of family and friends they were able to get the shop off the runway and became well-known for hosting book clubs, tastings, social gatherings, and fundraisers. Elizabeth will always greet you with a cheerful, “hello mama!” She lets you know she thinks of you by picking up little items while shopping, reaching out to check on you, offering and rendering help in times of need. She loved people and networking and has touched the lives of many many people.





Her children were the pulse of her daily life. Homeschooling while running the store, Elizabeth would always be picking up and dropping off her four kids to multiple activities and classes. Her pride and joy, she would entertain us with the shenanigans of her family with her posts on social media of their enterprising kids, their activities, their food, their world, with peeks into their fun and loving relationship. Her husband, Humberto, had to return to his previous full-time job so that they could make ends meet and help the shop to survive. Things weren’t perfect, but they lived life together fully and with lots of laughter.




Pikes Liquor is no ordinary liquor store. It is a boutique filled with local Colorado art, food, furniture, crafts, and feel. It is a come-sit-down-for-a-while shop, tastefully and personally decorated to make the client feel welcome and pampered. We don’t know what the future holds for the shop, but we know that it was her baby and a source of joy.




24 hours after her sudden passing, the family and I sat in the funeral home, looking at caskets and the enormous expenses of giving her an honorable memorial. Too many questions swirling in their young minds, the children face grief and a loss that they weren’t prepared to deal with. We want to help ease the burden of bearing sudden funeral expenses if possible. Please consider supporting and sharing this.
