As many of you know, my dad and I found a place at Applebee’s where we can watch the Cowboys, eat steaks, and more importantly, a place Dad actually remembers and looks forward to every week. A big reason for that is our server Edwin Coen. Edwin came to the States from the DR, doing everything the right way. He and his wife work hard and live the dream. Unfortunately, he had a sudden heart issue that had him hospitalized and unable to work. With mounting medical bills and lost wages, I’m looking to throw some support his way until he is back on his feet and back at our friendly neighborhood restaurant. My dad sometime doesn’t know if it’s breakfast or dinner time, but he knew something was missing this last Sunday. It was Edwin’s smile and friendly “How’s it goin’ Pops?” we’ve grown to love every Sunday.
