We want to be Georgia's first Latina Owned Specialty Vegan Coffee Shop; a public space that will follow the Specialty Coffee Association’s worldwide recommended standards for brewing coffee and creating espresso beverages. A few years ago I was fortunate enough to have discovered Les Dames d’Escoffier; this organization covered my costs with grants to help me acquire my certifications with the Specialty Coffee Association - roughly $5,000. I want to hire partners to work with me at Rainbow Calypso to also offer the same resources to help women further their education and strive for greatness. This is why I am adamant to set the bar high when I make you a cup of coffee, prepare an innovative special drink, and cook you a clean, but delicious vegan sandwich and pastry. We are a business that is 100% Vegan; everything on our menu is thoughtfully selected. This includes my friends with Verb Coffee Roasters, Color Cold Brew, Tanbrown Coffee, Third Culture Coffee, Roseman’s Remedies, La Dolce Madness, Revolution Doughnuts, Shelter Built Coffee, Bliss Bars, and Sevananda Coop, (including Non-GMO, organic, local items here in GA.)

A Little More About OVA and Rainbow Calypso’s Beginnings:

Hi, my name is OVA and I am the face behind all the magic that makes Rainbow Calypso - A Latina Owned Specialty Vegan Coffee Shop. I’m originally from Alaska, that’s where I grew up. Back then I experienced a few challenges and had no ambition in life. It was at my most darkest time where I got this crazy idea from the Universe to pursue a career to open a coffee shop. From that young age I could see that working in Specialty Coffee gave me a creative outlet to start something worthwhile and really find a community where I knew other folks loved coffee just as much as i did. It was at this moment I knew that I found my true passion and would one day make my dream a reality.

Now, almost 13 years later I am still in fact working in coffee; chasing my dreams, and putting every ounce of energy to provide a worthwhile experience as a local pop-up business.
Most of all, Rainbow Calypso's mission is to bring friends, family, and peers together as a community to highlight a small moment of your day with a delicious drink. I'm always happy to share my business and introduce Rainbow Calypso for all newcomers. There are a lot of folks I can thank for keeping me inspired to never give up!

It’s More than Just Coffee!

If you know me or whether you’ve just now met me, OVA, and Rainbow Calypso I want to tell you I just LOVE seeing folks come together for a good cause. Over all my years working in coffee I can see how this practice gives folks a moment to catch up with an old friend, to get some work done on their ideas, bringing friends and families together from all walks of life. Coffee is an amazing experience.

Currently, I do pop-ups at Punk Shows and Punk Festivals. Why? Well, one thing’s for sure I have seen a lot of the newer generation (punk youth) coming out supporting these shows! And I’m also seeing a lot of folks prefer not to drink, or have chosen to be sober and still come out to also support punk shows.

Rainbow Calypso is an alternative experience; meaning I can give folks something exciting to try! Whether it’s coffee, a pastry, or a cool signature drink with some innovative flavors, herbal tinctures, or bright vibrant superfoods; it’s something young people and sober folks can look forward to. Lastly, to make it even better it showcases a fully Vegan menu.

I’ve received a lot of positive feedback from folks really appreciating seeing this concept of selling coffee at punk shows and this inspires me to also keep progressing forward with the idea of ANOTHER goal to showcase Rainbow Calypso annually at larger punk festivals and spread the word nationwide!

What’s the End All Goal?




My long-term goal is to transform this pop-up business into a fully functioning food truck- but think of it as a bright rainbow coffee truck with smoothies, pastries, breakfast burritos, sandwiches, cool merch to style out in, handmade goods from local businesses and more!

I’d like to operate as a mobile truck daily and have a build-out of a drive-thru/walk-up window on each side of the vehicle so you could drive thru and pick up coffee to go or give you a space that you can walk up to place an order.

In addition to this, I started roasting coffee in January of this year! If you’ve purchased coffee from me I just want to say thank you for supporting me throughout this journey! We’ve already sold out and your feedback has been amazing! I want to continue to purchase more coffee from Ecuador and other countries of origin to share with y’all soon!

What Will Your Investment Go Towards?
Here's A Realistic Business Cost Breakdown:

$30,000 - for the actual mobile coffee truck itself

$2000 for a custom paint job on the food truck

Construction and build-out inside the mobile coffee truck $5000 (the drive-through windows, kitchen hood, electrical work, plumbing)

$1000 for large outdoor signage and menus advertising the business + street signs visible for traffic

Power Generator- $1500

Business license - $100

Mobile Food Facility Permit -$200/per year

Public Health License - approximately $100-$500; the cost will vary, but since we are only selling vegan food, such as breakfast and lunch sandwiches made fresh daily for grab-and-go convenience it shouldn't be more than $200 is my best estimation.

Employee health permit - $15/per employee

Health Inspection $200

Rent in a shared production space; this is where we roast our coffee: $3,960/per year = $330/per month

Espresso machine: $2500 -$5000

Fridges (we will need at least 2-3 qty) $4000 commercial fridges and a prep table fridge

Additional Kitchen Equipment (food processor, dehydrator, blender, juicer, flat top grill, induction burner, cutlery, etc.) $2000

Marketing materials/print materials: business cards, stickers, and bags for the coffee I roast, including sticker labels to identify each type of coffee I am roasting.

Green Coffee to keep on roasting! $10,000

**Average cost for roughly 55-65lbs varies between $250 -$500. It depends on the country of origin (where I'm getting the coffee from).

A few security cameras to make sure our mobile coffee truck is safe and ensures employee and customer safety at all times -$500

Disposable products $3000 (cups, lids, napkins, to-go boxes)

Food Costs $15,000 (this is our non-dairy mylk, the fresh produce, and ingredients we will use daily for all coffee, signature drinks, smoothies, and delicious menu items, plus vegan pastries
