DOES GOOD NUTRITION IMPROVE SCHOLARSHIP?
Good news! Because of genorous donations through Go Fund Me and other sources, we have raised a portion of the funds needed to meet our goal by January 31st. Only about $10,000 is needed to purchase the Edible Education equipment to meet the needs of our students! Can you help?
A recent survey entitled “Hunger in Our Schools” reported that 59% of children from low-income families come to school hungry. In areas of Arkansas, the percentage is likely higher, for the importance of eating healthy foods, especially fresh plant-based ones which should form at least 2/3 of a healthy plate, has not been stressed due to the high cost of fresh produce , the relatively low cost of “carb” loaded and unhealthy processed foods, and a lack of nutritional training. Little Scholars Schools (LSS), Little Rock, a private school, is addressing this national plague!
LSS’ recent study found over 90% of its students enjoyed eating garden produce dishes IF “kid-friendly” recipes were used AND they grew, harvested, AND were involved in preparing the dish. Herein is LSS’ challenge: procuring a safe, size-appropriate, mobile kitchen with which hands-on, healthy food preparation can be practiced by school children.
Kitchen a la Carte by Edible Education is an excellent answer, it accommodating up to 10 students at a time to smell, taste, chop, bake, and cook a wide variety of simple dishes. Even though many have been generous, LSS still needs $ 10,000. to fully implement this innovative proto-type, which will provide students experiential lessons in food preparation and engrain healthy eating habits that will last a lifetime. Clearly, LSS needs your help, so it can help its students be better nourished and become better scholars. Can we depend on your support?
