For 11 years, my wife and I have worked to build a business centered on clean, locally sourced food and a healthier way of living. As Culinary Institute of America graduates with over 40 years of combined experience, this business means a lot to us because it is not just about serving food. It is about making nutritional, health-focused options available in my community and continuing to grow that mission in a meaningful way.
We also feel strongly about what a restaurant should be. We believe the word restaurant comes from old French and Latin roots meaning to refresh and restore, and that belief has always reflected our mission and the experience we want to create for the people we serve.
Right now, I am asking for help because we are at a difficult point. I am struggling to pay staff, stay on top of bills, and maintain the structure and inventory the business depends on. At the same time, I have also been dealing with medical issues that have cost a great deal and have limited my ability to perform at the level needed to move the business forward. My health is improving, and I am grateful for that, but it has been a hard process personally and financially.
Support from this fundraiser will help us make needed repairs to the business, expand our reach through online sales, pay off loans, and update the kitchen and dining room. These are not one-time pressures alone. Ongoing support would help us keep up with staff, bills, inventory, and the day-to-day stability it takes to continue operating while we work toward these improvements.
