UPDATE: As on September 2019 Say Cheese! will be on the move! That's right we've heard from our far away fans, and we've taken a leap of faith and are working to get truck number 1 back out on the road and then we are literally hitting the road! That's right 48 states, 2.5 Months and who knows how many grilled cheese sandwiches! We'll be showing up major cities all over the United States! We believe that Grilled Cheese is America’s Staple Comfort food and three years ago Eric Kilgore and his Say Cheese! team decided that the world (specifically the DMV) needed options for good American comfort food and so the Say Cheese! food truck was born. Say Cheese! started with a dream of providing people with options when it came to everyone’s favorite comfort food and has expanded to add soups, mac & cheese and even dessert grilled cheese. Say Cheese! is not just another food truck it’s a taste bud experience. Say Cheese! prides itself on using the freshest ingredients and preparing your grilled cheese made to order.
Kilgore is a community driven business owner who believes in being an active part of his community in both serving them great food and serving along side them in their needs. Say Cheese! knows that without community it won’t be successful, that’s why they are inviting their community and friends to be a part of keeping Say Cheese! alive so that it can continue to grow and serve even more communities. Say Cheese! began in 2016 with a dream and a truck and in just three short years has expanded to two trucks and an even bigger community of grilled cheese lovers! But as you can imagine along with the growth of a business comes challenges and with challenges comes needs.
Kilgore is a firm believer in continuing to push through the challenges and inspire those around you. His inspiration comes from his grandfather Booker T. Kilgore (which by the way he has a sandwich named after him on the truck)! Booker was a fighter he served in the military, retired from Chrysler and did all he could to make sure his family was well taken care of, so Kilgore comes by his desire to face challenges and continue to inspire others in the process naturally.
So you might be asking what’s this project all about? Well as previously mentioned the Say Cheese! team has been met with some challenges this year, including maintenance issues with the trucks, one of our current trucks will cost nearly $10,000 to get it back on the road, the second truck needs some minor maintenance work and only having one truck running in the winter has been tough! So we are asking for our community, our friends and our family to help support us in raising $25,000 so we can push through the next few months and keep Say Cheese! moving (hopefully to a spot near you!) and growing.
It’s important to keep this legacy of grilled cheese on wheels alive because it’s not just a business for Kilgore it truly is a way to give back to his community. Providing jobs for those who might not otherwise be able to secure employment, empowering his employees to dream bigger than their circumstances and to be an example to those around him that your circumstance are NOT bigger than your dreams. Kilgore overcame his own obstacles to follow his dreams and is excited to continue to grow Say Cheese! and dream even bigger with your help!
