Veteran & minority owned popup becomes food truck

AM:PM BURRITOS is a veteran/minority owned early morning & late-night artisan breakfast and burrito food pop up that caters to those who are on the go (and with an appetite). Created while I was on my final military deployment and searching for my next venture in life; AM:PM was created. Using a made to order cooking style, we offer mouthwatering burritos with fresh sautéed vegetables, perfectly seasoned meats, cheesy sauces, on a bed of herb seasoned potatoes (instead of rice). AM:PM BURRITOS is an astute concept that addresses the ever-changing local demographic, and their conscientious dieting & appetite needs. Because of this, we focus on keeping a robust catalog of flavors to maintain our customers’ happiness while also offering alternative options to serve our fans from the vegan/vegetarian community. Also, we don’t stop at making food, we create community and help make connections through our food – eating something delicious from my (potential) food truck at your local coffee spot, creates a casual atmosphere and openness to talking to strangers or catching up with friends. In addition, AM:PM concentrates on supporting our local community. We use ingredients from area community gardens such as Raleigh City Farm, Wellfed Garden, and Nourishing Acres, ensuring that ingredients come from our own back yard. With a focus on local, we partner with CompostNow waste management to discard excess in a way that provides an opportunity to help grow our next batch. AM:PM BURRITOS strives to be more than just a food vendor, we strive to inspire all things community.
THE JOURNEY
Launching AM:PM BURRITOS was quite a bit more challenging than creating it. We had the idea, just needed the capital to flow with it. So like all businesses in America we initially tried the bank loan route, but no one wanted to lend to a new company even they had products for that exact situation lol. No worries, next attempt was private lending, but that too wasn't very fruitful. We even attempted VCs and seller financing, but again fell a tad short. So ultimately we tried our hand at self financing. With resources low, we scaled back and launched as a pop up. The only problem we faced was transportation. Not to fret, a solution was manifested, we'd just rent a U-Haul. Initially this move was a big success but the relief was temporary, the more we relied on the Uhual the more hiccups we encountered. The uhual was a great temp move for quick and spot situations however for us as our notoriety grew so did our demand and as a result we need(ed) a more dedicated mode of transportation and the uhual had did all it could do. With the uhual we were limited across the board, geographically we could venture out but so far before it was no longer beneficial. Operationally we could only guarantee "ownership" but for so long. Just these hiccups alone caused to postpone/cancel countless events, opportunities, and chances to connect with our community. However with a dedicated food truck, the U-Haul tug of war is a thing of the past.
