
Ellie's new project: Ghost Vegan

Project details:
I have the opportunity to start a "ghost restaurant," which is a kitchen serving via delivery only. No storefront, low overhead, just good food cooked by your favorite brunch enthusiast. I've partnered with an awesome little bar here in Nashville for kitchen space, and I'm working on getting set up with the delivery companies.
As many of you know, I'm pretty much a lifelong non-meat eater and I'm really excited to embark upon a menu that caters to my fellow vegetarians, vegans, meat restricted dieters, and people who just love good food and don't mind skipping the steak once in a while. If you've ever eaten my cooking, you also know that I don't lean on reinventing meat dishes to build a menu--something I believe really sets me apart from other vegan and vegetarian options. I love every aspect of the challenge and creativity involved in plant based cooking.
I'm creating a menu that's comfort food through and through, drawing on my experiences, heritage, and surroundings with Latin, Middle Eastern, and Southern influences. From Shakshuka Verde to Black Garlic + Molasses Hummus to Cajun Red Bean Sliders, these dishes come from the heart.
Funding details:
Before I ask you to fork over your hard-earned cash to help me launch, I want to stress that I will be treating all donations as a microloan. Everyone who donates will be paid back (anonymous donations will be treated as a gift, so please include your name).
Once this campaign finalizes, I will develop a 12-24 month repayment plan that addresses donors from the top down (largest donors will be repaid first). This is a small enough amount that even if I am not successful (I will be), you will still be reimbursed for your support. Essentially, you guys are giving me an interest-free business loan because you're awesome and you love me.
Your donation/loan ("loanation" hahahaha) will be used for administrative costs, business registration fees, equipment purchases, delivery service setup fees, startup food costs, and recipe testing expenses. If you'd like to see the preliminary breakdown of my budget, message me and I'll be happy to link you to the spreadsheets I'm working on--I believe in transparency in business.
