Hi, we’d like to introduce you to our dear friends, Jim and Laurie Reitz, and we’re all thankful that you’ve taken an interest in their rising dream.
Their story begins with Jim being trained in the art of baking in San Francisco which enhanced his passion for creating with dough, especially sourdough using natural leaven. Laurie, a natural talent for baking in her own right, has developed many complimentary baking recipes along the way.
Not only are Jim and Laurie, gobsmackingly talented in the kitchen, they are sincere and generous, always overflowing with joy and words of encouragement. You would be hard pressed to find more loyal friends, and unlike their tasty pastries, they’re not flakey. Nor buttery for that matter. But they are oh, so, sweet.
When they decided it was time to launch their new endeavor, they searched for a city in the Pacific Northwest. They ended up choosing Tigard, Oregon where the motto is: ‘A place to call home.’ How perfect! They knew it was a sign from above and proof they were headed in the right direction. They found an ideal location on Main Street to hang their shingle. Immediately they faced several setbacks with the space, delaying their ability to build out. Then CO VID hit preventing them even more so. The long delays have dried up most of their cash reserves causing them to come to a stand-still until they can get some immediate funding. We have been the primary recipients of all their yummy goodies, so please, for the sake of our waistlines, let’s get them up and baking soon for all to enjoy!
Their most pressing knead is for the main kitchen equipment in an artisan bakery... a 3-deck oven, a large 115-quart spiral mixer, and a laminator (for pastries and croissants). They previously paid a large deposit with a national supplier and now have a deadline coming up very soon to pay the remaining balance or they will lose their deposit. The $33,300 will enable them to take delivery of the equipment this year and open the bakery some time in 2021.
One of Jim and Laurie’s foundational principles for baking is to use whole and ancient grains and never the additives or preservatives that is usually found in typical all-purpose flour. It’s part of their mission to educate the community on the health benefits of baking this natural way while making it all delicious.
