Hi, my name is Miranda, and I’m the owner of Gemini Sweets & Treats in Salina, Kansas

I built my business from the ground up as a single mom, starting from home with nothing but a vision, creativity, and the determination to create something better for my family. Over time, that small idea grew into a real storefront and a loyal community of customers who have supported me every step of the way.

Today, Gemini Sweets & Treats has become known for our unique desserts, drinks, our food and viral-style menu items, and we’ve built a following across Salina, Fort Riley, Junction City, and Manhattan. We used to travel and serve these areas, and the support we received was incredible.

But right now, I’ve hit a point where I can’t grow the business the way I need to from inside the mall.

We’re limited by early closing hours (the mall closes at 8 PM), and some of our busiest demand is later at night. We also don’t have a commercial kitchen hood, which means I can’t expand fully into hot food the way I want to. On top of that, staffing has been one of the biggest challenges — it’s been hard to find and keep enough people to run everything efficiently in one place.

Instead of letting that stop me, I want to pivot and grow.

My goal is to launch a food truck that would allow me to:

• Stay open later and serve customers during peak hours

• Cook a full menu with proper equipment

• Travel back to Fort Riley, Junction City, and Manhattan

• Expand into new cities like Wichita and Kansas City

• Reduce staffing pressure by simplifying operations

• Continue building something stable for my family and community

The vision is to move all of our hot food operations into the food truck, while keeping our storefront focused on desserts, drinks, and quick items. This would allow us to operate more efficiently, serve more people, and grow in a way that’s actually sustainable.

This isn’t just about a food truck — it’s about keeping my business alive, growing it, and taking it to the next level.

I don’t come from money or resources, so I’m asking for help from the community that has already supported me so much.
