If you've been to Happy Jacks in the last 20+ years, you have probably seen, heard, or been waited on by Nikki. She has become a fixture of the restaurant and one of our most requested servers ever, by far. She has a huge personality, a great country twang, and a magnetic energy that draws everyone in. She loved her job (and told me often), and treated everyone with the same positive energy, no matter who you are. If someone treated her badly, she just said, "maybe they are just having a bad day." If I had a dollar for every time she asked someone, "do you like your bacon chewy or crispy?" I'd be a millionaire. She attended every work party, promoted every fundraiser, and described every special with passion; her job brought her joy and she made sure everyone knew. Not only is she an amazing asset to the restaurant, but she is also a great friend.
Nikki was diagnosed with Stage 4 Lung Cancer in September 2019. She has fought SO HARD in the last several months. Her main goal was to get back to work and to spend more time with her grandkids. She wanted to kick cancer's ass and get back to giving her tables a hard time.
Nikki's cancer has spread to her brain - she is currently being cared for by Coastal Hospice here on the Eastern Shore of MD. Devastated is an understatement to describe how we are feeling right now. It's hard to even imagine Happy Jacks without Nikki. Please help us support Nikki and her family during this incredibly difficult time. We would love to hear your memories and will share them all with her.
