Fuel the Beans and Greens Food Truck Journey

Hello family and friends, as many of you know, Beans and Greens is a Caribbean restaurant that offers Caribbean/Latin/ Soul Food in Saginaw, MI. I have been working on growing my food business for almost two years and though the plans and scope may have changed a few times here and there, I am pleased to announce that things are finally coming together and we are purchasing a food truck!

Many of you have shared the road of exploration with me as I initially focused on trying to launch Beans and Greens in a food truck in Bay City, MI. My dream was always to have a food truck and this opportunity to rent a food truck in Bay City was a good way to start my business.

After a few months, the truck's owner decided they wanted to move the food truck to Camp Grayling. For various reasons, this presented challenges that were hard to figure out and develop another start-up plan I could execute with my modest funds and wild dreams to bring unique and flavorful comfort food to the area that I was raised in, the area that has always had a variety of delicious food but not...Caribbean!

I looked into some options in Saginaw (where I live) and asked a fellow Chef and great friend for advice. She graciously invited me to be the "Ghost Kitchen from her well-established Bistro in Old Town Saginaw and offer a Late-Night menu 11 pm to 2 am Thursday thru Saturday. Although I was apprehensive about my menu reaching people during those hours I went for it and was very happy I did! My customer base has grown substantially in the last year and I have loved feeding your beautiful souls!

A few months ago, I was approached with the opportunity to buy a food truck. After reviewing the pros and cons I decided to take the offer and move into the food truck.. The decision was based on 1. We can extend our hours and offer dinner, late-night, and Sunday brunch. 2. Having a permanent establishment to grow the business. 3. I will have the space to offer more Vegetarian and Vegan options to a community with limited options.

Beans and Greens In-Betweens is an endearment to the many years I have spent as a curious and creative chef in the kitchens of family, friends, and restaurants. It is the melting pot of our menu, which features a variety of flavorful Caribbean/ Latin/Soul Food.

The truck is outfitted but needs some upgrades to be fully operational, So as I embark on this journey I am reaching out to you through this campaign to help me raise some funds to get the Beans and Greens truck up and running.

I will be working hard between now and then to do pop-ups, and parties to raise money, and awareness of our products and hopefully invite new faces to this growing campaign.

Hopefully, if we meet or exceed this goal we will have a small but necessary cushion to facilitate day-to-day operations and help catch our fall for the unforeseen gifts that the truck brings.
