From Refugee to Chef: Help Me Reach École Ducasse Paris
Hello, my name is Faustine—but everyone calls me Paji. I’m a refugee from the Philippines now living in the Netherlands, and I’m reaching out for support to pursue a life-changing opportunity: to study culinary arts at École Ducasse in Paris, one of the world’s most respected culinary schools.
In 2019, I fled the Philippines due to political persecution linked to my work as an LGBTQ+ and HIV advocate. I arrived in the Netherlands with nothing, went through detention and refugee camps, and slowly rebuilt my life. Today, I hold on to a dream that gives me hope and direction—becoming a professional chef.
Why Culinary Arts?
Food is my way of healing, connecting, and bringing joy. As someone living with HIV and navigating the challenges of trauma and disability, I’ve found deep peace in the kitchen. Cooking gives me purpose—and I want to use it to support others.
My long-term dream is to open spaces where people—especially those living with HIV or from marginalised communities—can feel safe, seen, and inspired. I also plan to launch a nonprofit called “Pedal for HIV,” combining food and cycling to raise awareness and promote community wellness in the Netherlands and the Philippines.
Living with FND
In 2021, I began experiencing seizures that led to multiple ambulance trips and hospital visits. I was initially diagnosed with epilepsy, but doctors later identified Functional Neurological Disorder (FND)—a condition often caused by trauma that affects how the brain sends signals to the body.
It’s been a tough journey, but I remain determined to move forward and build something meaningful.
A Setback—Then a New Door Opened
I originally applied to Le Cordon Bleu Ateneo de Manila, but was rejected because I don’t hold a high school diploma—even though I’ve studied at the university level in the Netherlands. It was frustrating to be turned away despite my experience and motivation.
Thankfully, another door opened. I applied to École Ducasse, first in Manila, then in Paris. The Paris team was incredibly responsive and kind. They reviewed my CV and offered me a 10% scholarship toward their Culinary Essentials program.

Updated Budget: Why I Still Need Help
Although I’ve saved some money toward this opportunity, it’s still not enough to cover all the costs. I even applied for a loan from the Dutch Municipal Credit Bank, but there’s no guarantee it will be granted. That’s why I’m asking for help.
Here’s what I need to fund:
Program tuition (after 10% scholarship): €8,910
Accommodation in Paris (2 months): €1,200–1,600
Daily expenses (food & transport): €400
Emergency buffer: €500
Total fundraising goal: €11,500
I plan to cook for myself and live simply during my time in Paris. After finishing the course, I’ll return to the Netherlands to work and support the rest of my career path independently.
Why Paris?
This isn’t just a dream—it’s a practical opportunity. I now hold Dutch citizenship, which allows me to study in France with security and the ability to return to the Netherlands afterward.
Unlike in the Philippines, where outdated academic requirements closed doors for me, France and the Netherlands value who you are and what you can do—not just your paperwork.
