Hi, my name is Mitchy Pearson and I’m the owner of Not Your Regular Breakfast (NYRB).

NYRB started as more than just a food truck — it was built from passion, long days, early mornings, and a deep desire to create something meaningful for my family and my community. Over time, it’s grown into a business that not only serves good food, but also gives back through our Kids Eat Free efforts, which have become a huge part of why we do what we do.

Right now, we’re preparing to take our next big step: transitioning from a food truck into a brick-and-mortar kitchen in the new year.

We do have a location in mind, but we’re also open to any leads on existing brick-and-mortar spaces with an established kitchen already in place. Our goal is to move responsibly and intentionally into a space that allows us to operate consistently, increase order volume, and better serve families in our community.

The past few weeks have been challenging. My daughter unexpectedly lost her daycare, and we’ve been navigating personal life changes while also dealing with food truck setbacks. We recently got our generator back, and we’re planning to be back up and running on the truck shortly after Christmas. We’re also still completing pantry bag distributions — that mission hasn’t stopped.

We currently have no loans and no grants supporting this move. Everything we’ve built so far has been done through hard work, sacrifice, and community support. We’re raising funds now so we can be ready when the opportunity comes — and we believe that time is soon.

Moving into a brick-and-mortar kitchen comes with real costs, including permits, inspections, equipment, inventory, packaging, branding, and staffing. Our goal is to raise $10,000 to help us take this step the right way.
