Hi, I'm Grace—an artist, chef, and nostalgic dreamer turning a 1979 Chevy step-van into an ice cream truck.

I've spent the past 15 years working in restaurants, learning the crafts of flavor and presentation, and experiencing the joy of feeding people. The chef life taught me how to work fast, think creatively, and pour my whole heart into what I make. Now, I'm taking all of that experience and channeling it into my own project.

At the heart of it all is Lex, my late dog who meant the world to me. He was determined, adventurous, and bold. I needed to find ways to make his absence more bearable, so I created this character—for him, for anyone who ever met him, and for everyone that never will. His memory will live on in this project. The truck will feature a hand-painted mural of Lex, dressed in a lab coat, experimenting with frozen dessert creations, a mad scientist obsessed with creating the tastiest ice cream treats.

The Grey Dog Ice Cream Lab will be a homemade ice cream experience featuring rotating flavors and playful formats. Every flavor is its own experiment—equal parts of nostalgia, curiosity, and delicious ingredients. Expect rotating small-batch creations, seasonal experiments, and classics with a twist.

I've invested a lot of my time, energy, and savings into bringing this dream of mine to life. But I still need some help. Your contribution would be put towards final truck repairs, initial inventory, additional equipment... and a neon sign!
