I’m Michael Louis, and after years pouring my heart into every bagel at BrownStone Bagels, I’m chasing a lifelong dream: my new hobby farm. My daughter (who loves our neighborhood) now runs daily operations, so the shop stays in great hands—same quality, same warmth.
From the farm, I’ll supply the store with homegrown treasures: fresh vegetables, golden honey, wine grapes, table grapes, juicy figs, homemade jams, and fresh eggs in a few years. (Even exploring wheat!) This closes the loop: farm-to-table freshness means bolder flavors, peak nutrition, lower carbon footprint, stronger local economy, and total transparency. Store waste (coffee grounds for nitrogen) gets composted; fertilizer only from nearby farms.
