Ezra's Bagels Cafe

Hello from Chelsea, Giuseppe, and Ezra of Ezra's Bagels! We have some exciting news to share - after 10 months of working out of our tiny kitchen, we are moving on up, to a full café space! While we've already secured the money we need to cover our startup costs, any additional funding we can raise will help us to make our cafe as warm and welcoming as possible.


What's Changing

Currently, our bagel customers have to write us on Facebook or Instagram, or email us to set up a time (usually a day or so in advance) and then come and pick to their bagels from us. With our new bagel shop café, all of that will change. Instead, our customers can just pop into the shop during our opening hours and get whatever bagels they'd like. We will also finally be able to offer spreads and other bagel accoutrements. As with any good café, we will also have assorted beverages, sandwiches, and other baked goods.

The space we will be moving into is a large space with ample room for seating, as well as a spacious back courtyard. While there are many cafés in Prague, ours will be more of a classic American coffee shop experience than is currently available. You order at the counter, grab a seat on one of the many comfy couches and chairs, and feel comfortable to stay as long as you'd like (free Wi-Fi goes without saying).

We will also host community events, such as language exchanges, readings from local writers, games (DND, anyone?), and will have a wall dedicated to a rotating gallery for local artists. We also plan to have an artist/writer in residence program.

Of course the space will also allow for you to meet with your friends and groups at your leisure. There will be a kids corner so parents can feel welcome to come with their children, and maybe even keep Ezra company .


What's Staying the Same

Well, first off, it's still just us. We will still be hand making all the bagels in the traditional New York style that you have come to love about Ezra's Bagels. The recipe will not change, if anything, it will improve as we no longer will be restricted by our small kitchen. We will still have the same bagel options, but will be able to add more food items, and will have specialty of the day bagels each day.  

As a vegan family ourselves, everything we offer will still be 100% vegan.

Finally, my (Chelsea) terrible jokes will still make flood our social media accounts, and for that I am sorry. 

What the Funding Will be Used For

We have most of what we need for the starting-up logistics. Any additional funds will go towards making the space as comfortable for its patrons as possible. This includes furniture, lighting, and overall decor. 

Our aim is to be as eco-friendly as possible by furnishing the space with carefully curated secondhand and refurbished pieces.

We will be having a loyalty program, and you'll be automatically enrolled in that, and will be given a little thank you gift. You will also be invited to our soft opening event, where there will be of course complementary bagels and drinks.

We could maybe even convince Ezra to personally thank you, though right now the extent of his language skills is meowing at the cat, so no promises there.

A huge thank you in advance to anyone who can help us make this a reality. It's strange to think that just a bit over a year ago, I was pregnant, craving a decent bagel, only to find that the best solution was to just do it ourselves.

A special shout out has to go to our friend Stephanie Cohen who said "um...can I buy some off of you?" followed by "yeah, you should sell these." It didn't seem like even the remotest of possibilities at the time, and the response over the past 10 months has been incredibly humbling. 

In addition to building a business, we really feel as if we've built a community for ourselves here in Prague. After years of being our own little island in this city, we now have customers turned friends. This café is just the next chapter in cultivating that community.
