Mint to Grow 721 Mint It Herb & Juice Bar's Expansion Fund

It all began in 2021, following a challenging period in 2019-2020 when I struggled with my health. Extreme inflammation in my stomach, along with acid reflux and GERD, made eating nearly impossible. I collaborated with my doctor and sought natural remedies, as medications only aggravated my condition. I lost 40 pounds in a month and felt as if I was preparing for death, surviving on nothing but crackers and water. After numerous doctor visits, specialists, and scopes, I learned that my stomach was simply upset. The foods I was consuming were detrimental and gradually harming me.

After a six-month struggle, I finally found relief by using manuka honey to soothe my throat and stomach, allowing me to start drinking cold-pressed juice. I conducted extensive research and developed recipes tailored to address my deficiencies in iron, vitamin D, blood, and heart health. Working closely with my primary care physician, I ensured that my creations would effectively boost my nutrient levels, and they did—I was finally thriving.

However, sourcing the necessary ingredients proved to be a significant challenge. Frustrated by the lack of availability in the Louisville community, I decided to take action. Thus, 721 Mint It Herb & Juice Bar LLC was born out of necessity, innovation, and a commitment to serving myself, my family, and others. The numbers 721 are not only my birthday but also the inspiration behind the business. I needed to show myself some love, so I looked in the mirror and said, “Love you.” Those words became a mantra for my healing journey.

Interestingly, 721 represents that message: seven letters, two words, one meaning—“LOVE YOU.” Every time you support my business, you’re expressing love: Love you, Mint It. We love you, and it’s essential to love yourself, too, because together, we both MINT it! Few could have predicted the growth my Herb & Juice Bar has achieved since then, but the hard work and dedication of my team, family, and close friends is the story of our success. We never rest on our laurels and are always striving to expand our product offerings and improve our service. Being a Wife, Mom of 7, & Yaya of 3, makes me strive harder than ever to ensure my family is nourished daily with quality herbs, fruits, and veggies. Now, I'm proud to say I can offer that same love of healthy food options to you and yours.

Fast forward to 2024, I would like to thank you for your support over the past years. I took a bold step and left my career to fully focus on building a business that aims to help others. Last November, I felt inspired to choose a location at Logan Street Market as the new home for my business venture. We experienced rapid growth and by April 2024, we expanded into two spaces. Your support has been incredibly beneficial to us in the last six months, and now we are looking to grow once again.

During this next phase, we aim to create a welcoming space that offers not only juices, herbs, smoothies, bowls, nut milks, and wellness products, but also a community hub for gathering, learning, and being a one-stop shop for all things wellness.
