Over 30 years in the restaurant business, I have witnessed a horrible changeover from real food to processed junk - from Mom and Pop operations who sourced real ingredients from local farmers to Corporate restaurant chains and massive food groups with cookie-cutter ideas and boring processed foods, heavy on fat, salt, preservations and chemicals.  They support factory farms to grow bigger, faster and cheaper.  

No More!  For me, it's going to be natural, handmade, local and organic. Starting with my Natural Grass-Fed beef meatballs!  I've been selling at the local farmers' markets for the past several years and it's time to step up.  I've got a great local spot to park a food truck all week long.  If that works, we can look at space for a  Restaurant /Market in the future. 

About Chef Rubeo:   Anthony grew up in Harrison, NY in an Italian American family. He developed a love for cooking at a young age which evolved into a passionate career for the last 30 years. In that time, Anthony has work as a pizzaiolo, head chef at a 5 star restaurant, personal chef and caterer!  Supporting local farmers and creating food with local ingredients is very important to him.

I need to raise $12,500 today for the truck and equipment.  I have enough to cover insurance, licensing, fees, initial advertising and food to get started.   You are more than welcome to donate any amount you like.   If I don't get to the $12,500 it may slow me down, but I'll keep trying.

My goal is to change the way we look at food.  Food is simple, easy - it just takes a little time and love.  We need to call out corporate America and tell them to stop!  We are not eating their crap any longer.  Projects like mind will bring awareness and open the world of good natural food to more and more people. I am committed to this project and will see it through.  However, I know this is a risky venture -  ours has become a Walmart culture, cheaper and faster.  With your help, I hope we can change this, at least in our little corner of the world.
