Craft cider, local organic apples

PT (scroll down for English ) O meu plano é produzir uma sidra feita a partir de maçãs de origem local, principalmente orgânicas, trabalhando em estreita colaboração com pequenos produtores e variedades autóctones, utilizando a "fruta feia" que de outra forma seria desperdiçada. Inspirando-me nos vizinhos Espanha e França, que têm uma longa história de produção de excelentes exemplos, quero criar uma sidra com identidade portuguesa. Com formação em enólogia, vou analisar técnicas novas e inovadoras, focando-me nos métodos de produtividade orgânicos e naturais. Mudei-me para Portugal, para me dedicar totalmente a tornar esta ideia realidade e nos últimos dois anos consegui comprar a maior parte do equipamento de que preciso fazendo tanto tipo de trabalhos loucos. Tenho usado todo o meu tempo livre para experimentar diferentes variedades e técnicas de maçã, bem como encontro com retalhistas, restaurantes e bares, que estão todos interessados em ver este tipo de produto chegar ao mercado. Agora, com uma visão sólida do tipo de marca que quero criar e com os produtos e produtores certos a apoiarem-me, estou pronto para o empurrão final. A atual situação económica aqui no Algarve é bastante difícil neste momento, uma vez que os postos de trabalho dependem principalmente do turismo, mas estou confiante de que, através do gofundme, posso angariar o capital que preciso para comprar fruta para a próxima época e ter garrafas nas prateleiras até ao final do ano. É muito importante para mim que as pessoas que doem sintam que fazem parte da viagem porque sem ti não será possível, por isso estou a olhar para fazer garrafas de edição limitada, ajudar com ideias para nomes e rótulos e claro que haverá muitas amostras! My plan is to produce a cider made from locally sourced, mainly organic apples, working closely with small producers and native varieties, using the "ugly fruit" which would otherwise go to waste.   Taking inspiration from neighbours Spain and France, who have a long history of producing excellent examples, I want to create a cider with a Portuguese identity.  With a background in winemaking I'll be looking at new and innovative techniques, focusing on the organic and natural productivity methods. I moved back to Portugal, where I grew up, to fully dedicate myself to making this idea become a reality and for the past 2 years I've managed to buy most of the equipment I need by doing so sorts of crazy jobs.  I've been using all my spare time to experiment with different apple varieties and techniques, as well as meeting with retailers, restaurants and bars, who are all keen to see this kind of product come on to the market.  Now with a solid vision of the kind of brand I want to create and with the right products and producers supporting me I'm ready for the final push.  The current economic situation here in the Algarve is quite tough at the moment, as jobs rely mainly on tourism, but I'm confident that through gofundme I can raise the capital I need to buy fruit for this upcoming season and have bottles on shelves by the end of the year. It's really important to me that people donating feel as though they are part of the journey because without you it won't be possible so I'm looking at making limited edition bottles, help with ideas for names and labels and of course  there will be plenty of samples!
