
Cooking Equipment for the Et Al. Team

We are the team of chefs who built the kitchen program at Vintage. We are now working together as our own team as et al. to create weekly pop-up food and drink concepts at Foolish Things (both downtown and on Brookside) on Sundays, Tuesdays, and Wednesdays.
On Sundays, we'll be offering set menu, all-inclusive food and drink experiences called the "et al. dinners" at Foolish Things Bar and Biscuit.
On Tuesdays, we'll be hosting "Taqueria et al." an a la carte, walk-up concept at the downtown Foolish Things focused on beautifully made from scratch masa. Taqueria et al. will be the only food program in Oklahoma that utilizes the full nixtimal process for all masa products.
On Wednesdays, we'll be hosting "Dumpling Night by et al." an a la carte, walk-up concept at the downtown Foolish Things centered around hand-folded dumplings, sake, and other tasty Japanese foods.
Since we're branching out on our own, we need to purchase all of the equipment it takes to cook for our large community of friends and supporters. It's simple but not that cheap things like a commercial fridge, plenty of sheet trays, cutting boards, tons of storage containers, blenders, food processors, etc. We have compiled a specific list of equipment that we are needing to begin our projects, you can see that list here.




We are also raising five-hundred dollars per team member to act as their income in the gap week between our work at Vintage and our work in collaboration with Foolish Things.

"Et al." is a term that means "and others" and is usually used to indicate that a piece of academic work has many authors without naming them. Choosing it as the name for our entire team is a way of honoring the fact that all of our work is about the entire team, not just one or two leaders. We are proud of our team, and have no intent to leave them nameless. Our team is Colin, Marco, Sarah, Alex, Chloe, Julia, Noah, Peter, Ethan, Ben, Dalton, and a huge team of local friends, allies, and supporters who make our work possible. We worked together to create the set menu dinners at Vintage in the second half of 2020, the monthly residencies at American Solera, dumpling nights from Natsukashii, taco parties by Tres Nidos, mind-blowing biscuit brunch by Bischix, and many other projects. We bring the spirit of collaboration and teamwork to every project we involve ourselves with can't wait to feed you all soon!
