Our Dream: Début

After four years in New Orleans, we—Benjamin and Grégoire—are returning to Paris to start a new adventure: opening our own coffee shop, Début. It’s more than just a café; it’s a space that reflects who we are—a place for great specialty coffee, homemade pastries that bring back childhood memories (both French and Belgian, of course!), and a curated selection of vintage homeware and decor.

Why Paris, Why Le Marais?

We’re pouring everything into this project, working side by side to bring it to life in the heart of Paris, in Le Marais—one of the city’s most vibrant neighborhoods, full of history, culture, and life. For our friends in New Orleans, think of it as the French Quarter of Paris! For those already familiar with Le Marais, you know it’s the perfect place to bring our vision to life.

What Makes Début Special

Début will be more than just a coffee shop—it will also be a place where you can browse and shop a handpicked selection of vintage tableware, home decor, and small furniture pieces. Whether you’re coming in for a cappuccino or browsing for a unique gift, we want it to feel like stepping into a space filled with treasures waiting to be found.

What We Need

Opening a coffee shop requires a lot—from a La Marzocco espresso machine (around $15,000) and coffee grinders to tableware, furniture but also the lease, renovations, training, a fridge, an oven—just to name a few. And all the equipment needed to create a warm, welcoming space. Because we want Début to be truly unique, we’re even planning to integrate a real antique upright piano into the counter—yes, literally! That way, between two lattes, Benjamin might just sit down and play a little music.

We also care deeply about sound and atmosphere. We plan to invest in a proper hi-fi audio system, and from day one, music will be played on vinyl to create a cozy, timeless ambiance.

A Full Circle Moment

A fun fact? We actually met in a coffee shop in Paris in 2018. So in a way, this is all coming full circle!

Staying Connected

While leaving New Orleans is bittersweet, this project is also a way to keep a connection with all the wonderful people we’ve met along the way. To our friends across the Atlantic, this is not a goodbye—it’s a way of bringing a little piece of us with you. And to those we’re reuniting with in France and Belgium, we can’t wait to share this new chapter with you!

Début

Après quatre belles années à La Nouvelle-Orléans, nous rentrons à Paris pour nous lancer dans une nouvelle aventure : ouvrir notre propre coffee shop, Début. Plus qu’un simple café, c’est un lieu à notre image : du très bon café de spécialité, quelques pâtisseries maison (françaises et belges) qui réveillent des souvenirs d’enfance et une sélection d’objets et de déco vintage à acheter.

Le Marais

Pour nos amis de La Nouvelle-Orléans, on pourrait dire que c’est un peu le “French Quarter” parisien. Et pour celles et ceux qui connaissent déjà, vous savez à quel point cet endroit est fait pour accueillir Début.

Un lieu qui nous ressemble

Début ce sera aussi un lieu où vous pourrez découvrir et acheter une sélection soigneusement choisie de vaisselle vintage, de décoration d’intérieur et de petits meubles (si on a la place). Que vous veniez pour un cappuccino ou pour dénicher un objet unique, nous voulons que chaque visite soit une petite découverte

Ce qu’il nous faut pour ouvrir les portes

Ouvrir un coffee shop, ça demande pas mal de choses : une machine à espresso La Marzocco (environ 15 000 $), des moulins, de la vaisselle, du mobilier, droit au bail, les travaux, les formations, frigo, four etc. Tout le nécessaire pour créer un lieu accueillant, beau, et fonctionnel. On a même l’idée d’intégrer un vieux piano droit directement dans le comptoir ! Comme ça, entre deux cafés, Benjamin pourra s’installer et jouer un peu.

On attache aussi beaucoup d’importance au son, à l’ambiance. On prévoit d’investir dans un vrai système hi-fi et la musique sera diffusée uniquement depuis des vinyles.

Début, c’est aussi une manière de rester proches. Que vous soyez en France, en Belgique ou de l’autre côté de l’Atlantique, vous saurez où nous trouver — et on a hâte de partager tout ça avec vous.
