Chef Albert’s Small Thyme Kitchen start-up

      The main intention of this fundraiser is less relying on the charity of our friends and family but more about introducing our concept and providing rewards that are a good value for our contributors—we want you all to be part of this!
 
Let’s shoot a little backstory so we can get a more acquainted. I grew up around food, I’ve been in the restaurant business for 17 years. My grandmother was an inspiration on how 'tradition means the world.' She would hand-crush the tomatoes in a strainer to make sure there were no seeds in the sauce, because she said it would give an off bitter flavor. She learned it from her mother and her mother before that. Her precision in cooking without a recipe and having it taste the same every time was amazing. Growing up we would have block parties. Everyone in the neighborhood would bring their family recipes and bring all the diversity and culture to one group making us all one big family.
 

I have met some great chefs and cooks in 17 years in the restaurant industry and have built a true home away from home. The freedom to create and be myself is an amazing feeling. My colleagues and chefs from other restaurants are my largest inspiration. We are a very tight-knit community that have each other’s back when someone needs help. The chefs I worked for and with taught me a lot of life lessons. The Best lesson taught in my career - Integrity is the key. Listen to the chef and the correct answer is always, 'Yes, Chef.' Cook with your heart. Don't be afraid to fail. Failure teaches you what not to do again. Learn from your mistakes and don't get down on yourself.




 
 We believe there is something special about making food to share with others. Small Thyme Kitchen will soon be a mobile eatery with consistent hours throughout Arizona. It has always been a dream of mine to operate a small business. I decided it was time to take a chance with this food truck adventure.
We will offer a variety of dishes featuring favorites that remind us of home and the heritage in which we learned to cook. Our goal is to make homemade and local food that can be enjoyed while creating memories together 
 
 
 
Small Thyme Kitchen is more than just food, it’s community centered, sourcing local products, collaborating with breweries, restaurants and other local chefs to create an experience like no other. 

 
We intend to use funds from this fundraiser to enhance our truck’s visibility as well as cover expenses for permits and other startup necessities. Small Thyme Kitchen is collaborating with other local small businesses to promote  and support each other in our ever growing community . If we exceed our goal, any funds will go towards future equipment upgrades or any unexpected costs or items.
