Overview:
Have you ever had a dream that you kept waiting and waiting for the right time to make happen? Same! So yes, this is me making it happen! I am not someone who is cut out for the corporate world. Thus, the concept of Brunch After Dark was born! I plan on opening Pittsburgh's only official brunch truck, BUT, that doesn't mean I will only be serving during brunch hours. I'd love to cater to the late night crowd Thursday through Saturday. Sunday brunch is a MUST. That leaves the other days of the week to be available for lunch time at businesses that will have me.
Concept:
The truck is based off of a "build-your-own" model. $4 will get you started with either (2) savory blue waffles, (2) red velvet waffles, or a container of tator tots or sweet potato tots. From there, you will have the option to add on a wide variety of toppings including (but not limited to): syrup, a compote of blueberries and pineapple, country gravy, veggies, cheese, sour cream, fried eggs, bacon, and popcorn chicken. These toppings with vary in price (free, $0.50, $1, or $2 for the meats.) Waffles and tots are also available as a side order. For example, you could make your own chicken and waffles with a side of tots and a drink for only $10!
What makes us special?
Come one, come all to our LGBT, vegan, and tree hugger friends! Brunch After Dark is an LGBT owned business that would love to work as many pride or fundraising events as possible. Besides that, we also recognize and love our friends in the vegan community. We will have a vegan waffle available for purchase along with our savory blue and sweet red velvet. Who cares about the environment? We definitely do! I am proud to promise that Brunch After Dark will only be using renewable and compostable to-go containers, cups, and utensils. While this is a small increase in our starting costs, it is very important to me for this truck to make as little of a carbon footprint as possible.
