Aid Kimber's (Chubby Vegan) Food Truck Recovery Journey

Hi my name is Karen and I have started this fund for my sister Kimber, and her start-up business Chubby Vegan- a food truck. Two weeks ago, two men broke into her truck at 1am and stole her generator, electrical cords and adapters, and damaged the truck. It put her completely out of business and unable to run the truck. My sister has spent 11 years working to create and open her food truck- it has always been her dream, and these two destroyed it in 10 minutes. She started the truck and the business fully by herself, and is self-funded and self-supported. She did all of this as an amazing single mom of 3, frequently working more than one job at a time for many years. Insurance (Progressive) has denied her claim on the generator and equipment. She has returned to substitute teaching in Chattanooga’s inner city schools (which she loves!) to make ends meet, but very much needs her business back up and running. She’s invested everything she has into it- financially, emotionally, and endless hours of hard work. She is resilient by nature, but this is a substantial adversity. My sister is always the one helping other people, always putting everyone else above herself, and rarely asking anyone for help for anything. Her business had just started, the winter is a challenging time for food trucks already, she is missing events, and she has lost significant income because of this incident. All that said, her goal is simply to be back operating the livelihood she sacrificed so much to create.
