Hi my name is Nick and I am looking to raise money on my wife’s behalf (Nichole aka Coley). Almost 13 years ago after a slip and fall while 7+ months pregnant we learned after a battery of tests that she had Celiacs Disease. To add to the trauma we were now faced with the unknown. Tears rushed down for hours, but after 14 hours in the hospital the first thing she did when we got home was dive head first into research and making contacts to include the South Florida Celiac Foundation. With sustained injuries from the fall that eventually limited her abilities working outside the home she took to converting all her family recipes and creating the best Gluten Free bread imaginable! As years went on the demand from family and friends turned into a small business selling at local green markets and eventually local groceries and specialty stores. With as much success as she has had, she is now attempting to scale this business to the larger markets making her amazing Gluten Free breads available to the masses while still using top quality ingredients. She has changed so many lives with her products and my wish for her is that she can reach more people with Celiacs and or similar dietary restrictions, never mind the benefit of eating healthier. With her newest product “Ready to Bake” frozen dough she will make every cook confident that they too can bake and enjoy a healthy gluten free bread to without all the nerves or headaches.
