I came to Enid, Oklahoma in November of 2008. I was a pregnant evacuee from Louisiana from hurricane Gustav. After relocating here, it was hard to find anyone to hire me because I was a high risk pregnancy. I was blessed that FEMA paid my rent but I was still worried about my utilities being paid and other essentials. My sister told me one day about the over night shift, at the hospital she worked, in need of a good meal because everything in town was closed at such late hours. This gave me opportunity to do something I loved and bless others doing it. I started cooking for the over night hospital workers and introduce my cajun and southern style of cooking to the Enid area. So many asked me to open up a restaurant back then but I had to postpone because of my son being born. Now I have the opportunity to open up a cajun restaurant and ask that you please help me with this project to jumpstart what I know will be a success in the Enid area.
