Hey guys. My names Jacob. I’m a 39 year old former chef that switched to working in the Fire/EMS field. Clearly I excelled at being a chef, you know the old saying “never trust a skinny chef”, well let me just say a lot of folks trusted me. That being said switching into a field that is as physically and mentally demanding, I have began to look at the fuel I’m putting into my gas tank. Couple that with spending quite a bit of time with much younger(in most cases) guys and gals who have had very limited experience fending for themselves, for lack of a better word, and you’d be amazed at the copious amounts of fast food that gets consumed. Most people have heard the rumors that the kitchen table is a sacred place in our house, well rest assured it is true. We spend countless hours, when we are not answering the public’s call, around this sanctum. Writing this book is a little bit selfish in doing so I’m forcing myself to be much more conscious about my fuel(no one is going to trust a “healthy food” cookbook written by someone that doesn’t believe in being healthy). But I also want to share some of my twenty plus years of cooking experience with these young guys and gals. As I sit here and write this I think about an article I just read in memory of a young, seemingly healthy firefighter that collapsed after working a cardiac arrest and passed away. Like I said earlier this job is both physically and mentally demanding. If I can give a hand to to my brothers and sisters by giving them some healthier alternatives to some classic food so we can still spend time in our sacred place and enjoy the camaraderie and joy that comes with breaking bread with family, I’ll chalk that up as a win.
