Cookbooks for Diabetes Patients

I am a Biology and Public Health teacher from San Francisco, currently on a travel sabbatical.  At the moment I am volunteering at a clinic in Bolivia. Many of the patients have Type 2 Diabetes. I'm providing some nutrition education, and have gotten a great response to a cookbook I've helped build. Unfortunately, the photocopies are very expensive here -- $2 per book! My $100 goal will provide cookbooks for 50 patients. If I receive more than $100, I will make extra photocopies for the clinic to distribute after I leave.
