We’re doing it! After working together at Bacchus for 5 years and loving every minute, we are ready to open our own place. Braizen will be a bold and elevated sandwich restaurant. Chef Charity will offer all of her signature sandwiches (remember her Pork Belly Banh Mi?) and many new sexy sandwiches and other creative menu items.
BRAIZEN will offer counter service at, lunch, happy hour, dinner and we will also offer a late night spot to feed hungry night owls and roaming foodies. We will serve the surrounding offices and residents as well as a BRAIZEN clientele of 18 – 35 year olds who love to try new foods.
In a rush? BRAIZEN will offer fast take out and many delivery options. BRAIZEN will create an environment that is bright and comfortable - a place to meet with your friends and watch the game, or come and chill on your own.

Reaching our fundraising goal is critical to the success of Braizen. Every dollar raised will go toward kitchen equipment (vent-less hoods are expensive), signs and furniture.
THE SPACE
BRAIZEN will be located at Mac Arthur and Main in Santa Ana across the street from Hutton Centre– surrounded by thousands of hungry office workers and residents. The surrounding offices have upwards 40,000 daytime employees, the luxury apartment buildings offer 900 units of residential space ( 4 high rises), there are 1300 single family residential homes and 580 hotel rooms, all this within walking distance.
These people need to eat and although there are a few casual restaurants within a 2 mile radius, BRAIZEN will be the only upscale Sandwich spot in the area. BRAIZEN will be a fast-casual spot with a cool vibe, quality offerings and affordable pricing. Beer and wine will be offered on tap along with a selection of more sophisticated wines available by Coravin system. Braizen will have comfortable seating inside. Outdoor tables will be available. This hip space of 1150 square feet will be bright and bold, with a warm and inviting feel.
We have been working hard to design a place with a cool vibe and an unpretentious environment. Braizen will have counter service for quick lunch service, a beer and wine bar, as well as comfortable seating and TVs for a casual get together with friends.
FOOD AND DRINK
With Chef Charity in charge, she will bring her same passion, work ethic and no nonsense approach to prepare next level sandwiches at Braizen.
At BRAIZEN, each sandwich is uniquely designed, to deliver a bold, flavorful, carefully conceptualized combination of braised and roasted meats, cheeses, and fresh breads with house made sauces, relishes, pickles each complimenting their counterparts.
Slow braised beef, pork and lamb all uniquely cooked in their own sauces and spices. Tender short ribs served with pickled cherry tapenade, juicy burgers paired with exactly the right cheese and accompaniments nestled on Brioche bun. Roasted Porchetta with cracklins, served with hazelnut gremolata and salsa verde. Chicken lovingly seasoned and fried, then boldly dressed and finished on a soft roll… A glazed pork belly Banh Mi with the perfect pickles, spicy sauces and, yes, on a French Baguette… Not in the mood for a sandwich? Meats are also offered atop fries, grains or mixed greens, with all of the delicious business piled high.
Craveable sides and small bites - seasonal vegetable salads, creative grain salads, Kennebec French fries, gooey mac & cheese, loaded tots, pickled vegetables and rich desserts will also be available.
We are excited to offer a great list of craft beers and wine on tap, as well as a more limited selection of more sophisticated wines, lovingly selected by Sommelier, General Manager and mom, Deb Willems. Deb will bring her passion for amazing wine to Braizen and will use a Coravin system to allow us to pour upscale wine in a fast casual setting.
LOCATION
When considering a location for Braizen we knew we wanted somewhere that had a large lunch clientele to support the business, what we found was better than expected. We found a space that also has a large number of luxury residential units within steps, so that we can feed them dinner as well. To find this space with some of the existing build out amenities is a miracle. We are so fortunate to have the opportunity to open a new business without all of the expense of a new construction project. This allows us to open quickly at a relatively low cost and get to the business of feeding our guests.

RISK AND CHALLENGES
Opening a restaurant is by no means a simple task. We have done our homework and are fully committed to making this happen. Some of you are familiar with our work ethic and our ability to put in the long hours it takes to run the show. That being said, we do know that we will encounter challenges along the way, but we will keep you in the loop as things progress with the project. We will do everything in our power to ensure we open on time and on budget.
