Who am I? you might ask. My name is Aaron Trejo, and I am the proud founder of Munchielab615. I am husband to my wife Esther Alejandra and a proud father to my beautiful daughters who inspire me every single day to keep pushing forward. I got a felony when I was a teenager, but I don’t let that define me—it is part of my story but not how my story ends. I hope to show youth that are finding themselves or have found themselves in that situation that no matter where you come from or what you’ve been through, you can struggle your way into resilience and strength. The streets don’t have to be your future.
MunchieLab615 is more than food. It’s proof that you can find growth, redemption and purpose when you stay focused and hungry. The name represents experimentation, creativity and passion. The word “lab” in our name stands for the creativity that goes into every meal, while 615 represents our community and roots. I’m proud of how far I’ve come but I’m even more excited of where we’re going. MunchieLab isn’t just my business; it’s my legacy.
Munchielab615 is a business for and by South Nashville—it’s my tribute to the heart and soul of the people who live here. I’ve lived in South Nashville my entire life and have seen it change over the years. This is the most diverse neighborhood in all of Nashville; the real melting pot.
Munchielab615 is a space where everyday people from all backgrounds come together to enjoy good food and meet their neighbors. We might speak different languages, but we are family, and together we are stronger. Munchielab615 is a symbol of community, creativity and connection. If you’ve come here before you what time it is!
However, we are currently facing many barriers and need your help to stay afloat. This can be hard to do when you are a regular person trying to open a local business for your community and not a wealthy franchise.
