When I found out I was going to have chemo as a part of my breast cancer treatment and after the initial shock and worry settled in, I realized this was my chance to focus on myself and figure out a new path that didn’t include my soul-sucking job. Chemo was a bit brutal, but I didn’t always feel terrible, so when I had good days I started looking for new opportunities.
Flash forward six months, I am DONE with chemo, I have quit my job, and I am going to start my own business! I will have a commercial kitchen space in St. Paul near the Wabasha Street Caves. My staff and I will prep and deliver breakfast and lunch catering all over the Twin Cities metro area. Our focus is on corporate functions and meetings during weekday hours. However, we can also do private events.
I also plan to find ways to use my business to pay forward the great care and kindness I received from so many during my treatments. Things are in the works still, but I hope to be able to donate food and my time to local events and organizations that support cancer patients and their families.
