My name is Jon, and I’m starting up Estuary! Currently doing pop ups highlighting fish we have here on the pacific coast with fun and different menus. Also using it to document my journey of trying opening a fish butcher shop in Seattle down the road. Working with less common varieties of fish we have available here on the west coast, while also trying to utilizing whole fish, and not just the (at most) 60% of the fish we are accustomed too.
This is still the very beginning of my journey and I’m very grateful to have seen as much support as I’ve seen as I already have. After doing two pop ups and posting frequently on Instagram, I can’t help but feel encouraged to pursue this harder and get more involved in pop ups / fun content for Instagram.
This fund is for helping me pay for my business licenses + fees to get started on my food business. It’s also to help me buy some light camera gear upgrades to film some fishing / outdoor cooking content for Instagram video / photo!
A lot of the product I source is from local operations and for many reasons it costs more to buy locally and smaller. So juggling food costs / start up costs / fishing + camera gear costs is just a lot and can make moving this concept very slow.
