WHO?
Andy Kubes is the mastermind owner/operator behind  SMOQEHOUSE, but every mastermind has a sidekick...that's me!  He has been working in the restaurant biz here in Faribault for nearly 20 years, starting as a busser and working his way up through pretty much every position/role there is. Most of you are used to seeing him behind the bar slinging beers and mixing some of the best cocktails around. He has developed cocktail programs, managed, and met some amazing people along the way.  It's time for him to switch things up a bit and dive into his real obsession, FOOD.  This guy eats, sleeps, and breathes food. He has an extensive collection of cookbooks, has maxed out our DVR with Food Network shows and our utensil drawers  (yes- plural) are bursting at the seams with every gadget imaginable.  Cooking is truly his passion and it is time someone else benefits from his amazing talents besides me! 

WHAT?
SMOQEHOUSE is a concept that has evolved over years in the industry. It is a fast casual eatery featuring hand crafted sandwiches, salads, soups, and whatever else he might feel like making that day. Think food truck but less mobile! We will have a very small menu (five items) with rotating daily specials to keep things fresh, seasonal, and to spark his creativity.  Sides will be a la carte allowing you to customize your meal to your hunger level and what you're in the mood for.  See below for a sample of our menu. We will be serving Coke products via our self-serve fountain system and also hope to open with a BEER ONLY license (you're shocked right?!). This will allow us to bring in craft beer, local hard ciders, and other malt beverages.



SMOQEHOUSE will be a very small, cozy joint featuring raw and industrial looking decor.  When you come in, expect to be greeted by Andy and/or me. We will have a large menu board where all current menu items and specials will be listed. When you are all set, head up to the ordering counter where we will help you out. Once you have ordered, you can pick up your condiments, if needed, grab your soda, and find a seat. When your order is ready, we will call your name and you can come grab it (it wont be a long walk, we promise)!  Expect ticket times to vary between 3-7 minutes depending on your order and time of day. There will be garbage recepticles located near the doors where you will throw/recycle your trash and be on your way. Then you will leave, tell all your friends, and come back again!

Where?
SMOQEHOUSE will be located in the Faribo West Mall. We signed a one year lease in the old snack shop location. It was the perfect start-up for us because included in the monthly rent was a commercial kitchen full of ALMOST all the equipment/appliances that we need to open. This eliminated  one of the biggest obstacles/expenses in opening our own place. We are aware of the challenges the location presents, however, we plan to take an aggressive and creative approach to social media/marketing early on to help get our location out to the public. We are also hoping that we can count on friends and family to spread the word and share their experiences.  Our future goal would be that we outgrow the space and move to a more central location. We gotta start somewhere right?!

WHY?
You all might think we are crazy but we feel like it is the next step for our family. It's terrifying, YES, but with the support of our family and friends we are confident that we will bring a concept to town that does not currently exist here.  We know the work involved in starting a business (a restaurant, at that) as well as the failure rate. We are already hard at work and excited to roll up our sleeves and dive in!

1. Beer Only liquor license- $1000
2. Alto Shaam cook, hold, smoke (used) $3300
3. Steam table (used)- $800
4. Stainless NSF cooler racks and tables $800
5. New dining chairs- $1000
6.  Signage- $750
7.  POS System- $1200
8.  Initial inventory- $3500


We are only launching this for 3 weeks. We know this is a short amount of time but we would like to keep moving forward on this project. We hope to be open in mid-February, pending licensure.
