My name is Iris Green, I am a gluten free and plant based chef and cookbook author. It is my desire to make plant based nutrition education and information on modified diets (gluten free, dairy free, allergy restricted) easily accessible and affordable.

Many people view vegan and gluten free diets as a privilege of the wealthy and yet so many would find physical and emotional benefits for not only their children but their entire family.

Reaching beyond the ethics and environmental benefits of vegan and plant based diets there is a population of children who are trapped behind the negative impact of their diets. Studies have shown that a child with autism who is nonverbal and non-communicative can make great progress in their functionality with dietary changes. I have personally spoken with many parents and relatives of children with autism who were able to watch the progress in their child with the modification of their diet. 

It is my passion to help teach low income families and families with disabilities the vast benefits and accessibility of gluten free and plant based diets.

I am presently searching for a space to use and have looked at several commercial spaces that are in appropriate locations with easy access via public transportation. 

Funds raised will be used for modification of the space and initial set-up such as installing hot water, sinks, running gas lines and set up the teaching areas. 

Any funds that exceed the amount listed will go to the set up of the teaching area and appliances.

About Iris Green:

In May of 2011 I developed an esophageal motility disorder that was the result of years of untreated digestive ailments. It took nearly starving to death as I was unable to swallow food and months of specialists and doctors for anyone to even consider the contribution that diet was making to my condition. I have been vegetarian my entire life and at this time I adopted a gluten free diet which nearly remedied the problem. It took years of recovery and my system is still very fragile and so at the beginning of 2015 I made the final step in embracing an entirely vegan plant based diet.

In 2011 I took this personal experience and used it as motivation to launch my bakery, Iris’s Petite Bake Shoppe, which specializes exclusively in gluten free and vegan baked goods. Over the past two years I published two cookbooks on the subject of gluten free and modified diet recipes, Gluten Free Cooking for Everyone: The Thanksgiving and Holiday Table and Gluten Free Cooking for Everyone: Kids Can Cook! In the Fall of 2015 I complete my specialization in working with children with disabilities at LA City College. Throughout this time I found that my customers have been primarily families and so I sought to educate myself further in the area of child development as it related to nutrition. Many of these families had children with disabilities such as autism and had found benefits in maintaining gluten free, casein free diets for their children. This is what has lead me to today!
