3 years ago Bonafide food truck started with a dream... to have a restaurant on wheels that utilized fresh local ingredients. Our small Wyoming hometown has a high number of local producers and a bustling farmers market. The demand for a fast food alternative, that had seasonal, fresh options was high and Bonafide was able to fill a unique niche of the market. We are pleased that in the last 2 years of operation we have sourced over $47,000 of locally grown or raised Beef, pork, poultry, farm fresh eggs by the 100s of dozens, and baked goods. Fresh produce through the seasons and other market items. This brought to light the limitations of the local food supply chains readiness to provide things like fresh dairy, and cheese products, certain canned goods, and pickled items... It is available to the private person or end consumer but health and safety rules, and Cottage Foods Law prohibit commercial restaurants, foodtrucks, and catering companies from utilizing local products in those categories not produced in a certified kitchen. In short - Bonafide cannot purchase cheese from 'Sally'  at our Farmer's Market, made locally to use on our tacos. UNLESS...

[Enter] Community Commissary (Kitchen)!!! This offers 'Sally' an inexpensive yet convenient solution to growing her business and offers an opportunity to other local business to purchase her product with all the legal requirements of a kitchen. In October of 2018 with a vision and a prayer Bonafide, LLC purchased a building and property large enough to house such a project. For the last 6 months demolition, remodeling and new construction have been underway on creating a beautiful, fully prepared commercial kitchen. With all the necessary amenities to have a space to cook, bake and craft local foods based products. We need your help with the last phase of the project - funding the warehouse storage and production space! A fundamental part of the puzzle is adequate refrigerated storage ... The 20x12 walk-in refrigerator-freezer is large enough for many members of our local foodtruck scene and community producers to have the storage capacity that they need to grow and expand current operations. The 1300 sq ft shop area needs sheetrock finishes, electrical and finished concrete flooring to complete the project to health and safety standards. We have already invested over $135,000 of our own funds, blood sweat and tears into construction. Months and months of labor, love, kitchen equipment, tools, tables, and small wares for our community to utilize in crafting and cooking food products are already on hand. Not only does this increase our ability to get more products into our Local market here in Sheridan Wyoming, but it will allow those producers to expand their reach as far as they can dream. The trend of mobile food vending is on the rise in our region and we have local folks just waiting to sign up and use this new shared kitchen and production space. The goal is to have the kitchen and dishroom construction complete by June 1st, and the remainder of the project shop area done in the following month.
