The Goal: The Pink Bakery, Inc - Tennessee's 1st Big 8 Allergen Free Dedicated Retail Bakery

My name is Nubian Simmons and I am the owner of The Pink Bakery, Inc. We make the most DELICIOUS desserts and baking mixes for people with food allergies to the big 8 Foods. You may be asking yourself, what are the Big 8 Foods? I’m so glad you asked! The big 8 Foods are: eggs, fin fish, milk, peanuts, shellfish, soy, tree nuts and wheat. We use only organic, Non GMO, gluten free, fair trade, and responsibly sourced ingredients and they are naturally vegan. Made in a dedicated kitchen free of the Big 8 foods.

I started this company because I have allergies to milk and wheat and I felt that the desserts and baking mix options made available to me were subpar. They tasted like cardboard and had weird textures. I decided to make my own. I had no culinary experience, BUT I had the DESIRE to make something that would taste great and wouldn’t hurt me.

After 5 years of research, experimentation, prayer and tears, I now have the 3 baking mixes you will see below. Our Mama’s Favorite®️ Chocolate, Chocolate Chip Cake Mix (and it really is her favorite), our Not So Plain Jane®️ Sugar Cookie and Pie Crust Mix and lastly our No Frownie Brownie®️ Mix. What makes our mixes truly unique is that all you have to add are oil and water. That’s it!

The Ask:
I am asking that you help us out in 1 of 2 ways. 1) Share this with as many people as you possibly can AND or 2) gift a minimum of $20 toward us opening the Tennessee’s 1st Big 8 Allergen Free Dedicated Retail Bakery. 

For everyone that donates a minimum of $20, and if we reach our goal, you will receive a free individual baked good and we will put your name on our bakery walls. What a joy it will be to see everyone who contributed to make this bakery a reality! 

Having a retail location will allow us to provide any of the 32 million Americans diagnosed with life threatening food allergies, an opportunity to come to a safe and dedicated bakery to purchase a baked treat. (This is so huge!!)

The Expense Breakdown:
Trying to open a specialty bakery is very, very expensive. Did I mention it was expensive lol? We need $500,000 but I am only asking you to help me raise $50,000. The money will be used in the following manner: $50,000 used as a down payment for the location and renovations.  I have invested everything I have into The Pink Bakery and now I need your help to take it to the next level - will you help me?

We feel no one should be excluded from life’s celebratory moments because of a food allergy. I started all of this for me, but now I do everything for you.

So I just realized that it’s been over a month since my last update. It’s amazing how fast time has flown by. I want you to know that I have been out here looking. We went from wanting to buy, to considering leasing back to wanting to buy again. I won’t bore you every property I have looked at (so many - sigh) and the unique surprises that come with each of them because they all have ended up the same outcome so far, not the one. Darrell says, “I have the patience of Job”. Lol I wonder how Job would have handled this situation .

We also haven’t had any more donations come in and that has been tough to emotionally deal with too. Another layer. I’m so thankful to everyone who has believed in us and what we are trying to do. This is such a huge undertaking, it is surreal that I am even going through this process.

The word that I live by every day is “constancy”. It’s on my bracelet. I look at it daily. Stay with me because I promise you, we will find the right building. I have gone through every emotion but what keeps me going is your trust and faith in me! I love you all!! Keep praying for us! I will update you from time to time on the progress. Have you ever looked at something and just knew that was the thing for you? Like that is it! It’s a feeling you get in your gut. Well that’s how I felt about 271 and 281 E Georgia. There was a little white house on the property and a huge warehouse space. I absolutely loved the little white house! When I tell you it was love at first sight or love at first loopnet listing I should say.

My mom, sister and brother joined Darrell and I to view the property. When we got to the property, the first thing I noticed was the signage on the warehouse space. It read “Leap of Faith”. I knew this had to have been for me because I was definitely taking a leap by trying to not only find a location but to open a bakery. Scary stuff!

It is always good to have different sets of eyes while looking at a building. I could visualize everything I wanted and needed The Pink Bakery to be in this space. I asked Darrell to run comps (a term I learned along the way) on the properties. After running the comps, I decided I was going to take a leap of faith and make an offer. After some negotiations we finally agreed on a price! I was so excited!! My real estate attorney Ursula Jones walked me through the purchasing contract and I said I wanted to just think it through for a few days. I had my earnest money ready. I thought we were all done with things since we got passed that hurdle. Boy, oh boy was I wrong. There is something called inspection time. It’s where building inspectors, engineers, surveyors and contractors come out and let you know what is the current condition or issues of the property. At that point you can decide if you want to move forward and buy the property or let it go.

Unfortunately we were unable to come to favorable inspection time terms and we had to let the property go. I cried for weeks about that and even asked Darrell to circle back to them weeks later, but I knew that what is for me is for me, and what is not is.

These properties were my dream come true - so I thought. Water damage and old buildings were a nightmare and the cost to repair them would have been way more than I could have even tried to afford.

It’s interesting where inspiration comes from. It happens when you least expect it. We took a tour of St. Jude Children’s Research Hospital in December 2015. If you have never taken the tour, it is an absolute must see! May God continue to bless all the people who work there now, who are trying to help cure childhood diseases. The story we were told was, unsure of his life’s direction, a young Danny Thomas sought guidance from St. Jude Thaddeus, the patron saint of hopeless causes. If the saint would point to the path he should take, Danny vowed to build a shrine in his name. Success followed Danny’s plea and soon after, the legendary entertainer set about fulfilling his vow to St. Jude. The result was St. Jude Children’s Research Hospital.

On one part of the tour, you stand in front of this huge mass of a wall with thousands and thousands of names listed. The wall seems to go on and on. Each of one of those people listed believed in the amazing work Danny Thomas was about to embark on. It was beautiful to see. May they all be blessed for their generosity.

In that moment, I knew that if I even opened a physical bakery, I would want to display the names of our supporters in a similar fashion. If you gift a minimum of $20 to our bakery, your name will be displayed on our bakery walls for everyone who visits to see who helped make sure this bakery happened. Thank you to those of you who have gifted. Thank you for helping to make sure, those who have life threatening food allergies would have a safe place to come to get a treat. We are truly thankful to you.

Darrell asked me what would seem like such a simple question, “so what are you looking for, how many square feet”? Sheer panic set in because I knew I didn’t really know and whatever I told him was going to be what he showed me. Where I was baking was about 600 square feet and knew that anything larger than that would be ideal. I told him 1,000-3,000 square feet.

I had looked at one property before I met with him. It was located at 3433 Park. I took my brother with me.

There are so many things you learn when you go look at a property. You find out when the building was built. What type of foundation the actual property sits on like crawl space or concrete. How valuable copper is and why people take it out of abandoned buildings. Or what year did paint manufacturers stop making lead based paint (which you need to know because if the building was built before 1960, more than likely there may be lead present ). Oh and you can’t forget about asbestos.

We decided this property as cute as it was, was too old and needed so much repair. We would have had to strip it down to the studs and essentially start all over. Does anyone need to sit down? Lol I surely needed to. Overwhelmed was the word of the day ‍♀️!

We have raised $2,267 toward our retail bakery so far. We are so thankful to the 49 people who have graciously given to make sure people with food allergies have a retail bakery they can come to.
