Hi, my name is Tora and my husband Nate and I are taking over the old Hart's Mesa space in West Olympia. This is a long time dream come true and we are beyond excited to share it with you!

This industry has been a part of my whole life beginning with my mom nursing me in the closets of restaurants on her breaks to my own career where I have done  every job from washing dishes to fine dining management. Lots of people work in this industry but for me it's a part of who I am and I look forward to combining my almost 20 years of experience with the incredible potential of this space.

One of the things we love most about this community is how everyone comes together to make really amazing things happen. This sense of teamwork and support is the foundation for everything Nate and I as individuals and a family strive for. We wouldn't normally be asking for money in this type of situation but in order for us to bring this dream to fruition in the best possible way we need some reinforcement. We hope our ideas excite and interest you and that you will consider being a part of this new chapter for the old house on Rogers!

DO NOT FEAR!
The first thing we want to let everyone know is that the hood issue in the kitchen is fixed so the smoke and grease will no longer be a concern.  Also there is air conditioning now so you can relax comfortably during the summer which has always been one of the hardest parts of this space. 

THE GOOD STUFF
The plan is to feature regionally sourced ingredients through our amazing network of local vendors. We really care about what we put into our bodies and we know most of you do too. We will feature items that nourish and sustain the body with clean, quality ingredients and thoughtful consideration to different dietary needs. 

We aren't trying to reinvent the wheel just keep things simple and accessible and it was really important to us to create a menu that provides good quality for a range of budgets. 

We are excited to partner with Batdorf and Bronson to bring a full coffee program back to the neighborhood along with light breakfast fare including full meal smoothies, fresh wheatgrass juice, avocado toast, bagels and smear with fresh veggies, pastries, scrumptious grab and go burritos and more. For lunch we will be offering a variety of options that in our house we lovingly refer to as “bits on a plate.” Think charcuterie board style. Cured meats, cheeses, pickled goodies, fresh fruit and veggies, compotes, smears, olives, nuts and more as well as entree sized salads of all kinds. These items will carry through to dinner where we are super excited to bring tapas style small plate dining to the westside.

With the addition of a carefully curated wine and beer menu we hope this will be a really lovely space to relax, eat food that is good for your body and enjoy quality time with with each other. Our beer and wine selction will be available for retail purchase as well. 

WHERE WILL THE MONEY GO?
The very basic start up costs for something like this are between $45-$70k and we are working with a completely empty space so the start up costs are substantial. The bulk of our initial costs will be going towards equipment, tables/chairs and overall renovations and design. We really want this space to feel clean and comfortable. 

GRATITUDE
