Keep Defi Open

In 2017 i took a leap of faith, quit my career, and choose to pursue my dream of opening a restaurant. With the mission to open and create a restaurant that goes so much further than just serving food. I wanted to truly create a dining experience. A place where guests can see their food being prepared, learn about where their food is coming from, what farms I am using and why. I wanted to craft tasting menus and offer an experience that is not found in Upstate New York. 

Over the last three years, I, along with help, opened and forged forward. Creating and crafting new and old flavors in new ways. Founded amazing relationships with farmers and customers alike and cultivated those relationships into friendships. It's amazing to see a guest comes to Defi for the first time, the change that happens as they realize fresh food tastes better and is better for you. 

Five months ago my dream came to a screeching halt with the shut down of the state due to the Novel Coronavirus and its illness, covid-19. My heart is breaking to see all the loss, if its a loved one, a dream, a marriage, a career... the list goes on. I'm seeing my dream and passion brought to its knees. I have exhausted my recourses and tried to change to meet the need and demand, not taking pay checks, working more myself, having to lay off staff. Long story short, I will loose this fight without help and support. I am humbly asking for your support during this time the above figure is about 6 months of expenses, some back owed, some coming due. If you like Defi, have yet to visit but want to, know me personally, or want to see good food find a way though this awful time in history, every little bit helps.    

Your support means the world to me. It means keeping this dream alive and that we can avoid bankruptcy. It means that the farms I work with will have a source of revenue as well.
