Let The Sugaring Begin!!!

“Can we come out and watch you boil sap?” A frequent customer question that tugs at our hearts. Many of you know New Creation Farm for our pork, beef, lamb, poultry, and our spirited children. Back in the day, families also knew us for our maple syrup. This 170-year-old farm — which is so very special to us for a litany of reasons — was originally known for its sugarbush and sheep. We have carried on that heritage over time, but our syrup processing had a setback when our equipment needed replacement.

Sugaring, to us, is an art. We love the sugaring days. It’s hard work, but we love it. We love creating superior quality syrup with traditional processing methods and tools that were used for generations. We love having schools and families visit, showing children first-hand how we create this delicious part of their day-to-day lives. Many of the schoolchildren who visit have never been to a farm before. We love watching the kids soak it up. Many of the families who join us for pancake breakfasts savor the tech-free, nature-inspired, one-on-one time together. We love watching parents and children connect in this way — here, on our farm!

When our evaporator failed a few years ago, we continued to tap our trees, but had the syrup processed off-site. Transporting the sap means a delay in processing, which means lesser quality syrup. (Syrup tastes different if the sap has sat for even a “short” time, like one hour.) We’ve been doing this for a few years and really miss doing the entire process here, at our farm, as a family. What we cherish most is being able to share it with others —people love to watch all of the steps. 

We want to personally harvest, process, and sell high-quality artisanal syrup — all three steps — on our family farm, as it used to be. We want to bring back school tours and pancake breakfasts again, adding vitality to New Creation Farm and the warm community that surrounds us. !

We are asking for your help to bring back the tradition upon which this farm was first founded.

What will it take? We have located a traditional evaporator and other equipment through a colleague. This previously-owned equipment will serve us well for years to come. In order to be ready for tapping, which typically begins in February, we would need to raise a minimum of $15,000 by the start of 2015!

More than anything, you will have the satisfaction of knowing that you helped us give back to the community and return to our roots.
