We are also working with our partner, DiRoNA (Distinguished Restaurants of North America), to identify restaurants in water-stricken areas across the United States.

The efficient operation of a restaurant or food service establishment is just as important as the food. It’s the things we don’t usually see that sometimes cost us the most. The cost of water is rising by 8% annually – and it is one of Earth’s most precious resources. By addressing this water waste stream through innovation, we are changing a wasteful industry practice into a sustainable one.

The USDA offers four safe ways to thaw frozen food – and one of the most widely used is the ‘cold water running method.’ Just as it sounds, cooks run cold water over frozen food until it’s thawed. Some restaurants do this a few times a week for a few hours, some for entire shifts.
To put numbers on it, this method uses 125 gallons of potable water PER HOUR to thaw one pound of frozen food. And all water (and money) literally goes down the drain.
