Israel Gonzalo Jaimes (1963-2021) was the main procurer for Ucayali River Cacao in Peru. His job was to purchase wet cacao beans (baba) from farmers in the Ucayali region and oversee fermentation to craft some of the most incredible cacao in the world. LetterPress Chocolate was the first chocolate company to work with this cacao, and has created this fundraiser to donate all proceeds to Israel's family.
Israel died of complications of COVID-19, and is survived by his wife Rosa and his children Jesus (12) and Abigail (4).
David met Israel during his visit to Peru in 2017, and was impressed with Israel's dedication, openness, and expertise. David is the owner of LetterPress Chocolate, who is donating 100% of all sales of their Ucayali Private Reserve bars towards this fundraiser until the goal is met.
