Fabrice Mallet came to the USA from France in 1980, moving to Tucson, AZ in 1991 to marry his beloved Adrienne, and continue his career as a chef. For the next twenty years, he worked at some of the city's finest restaurants including Janos & J-Bar, Hotel Congress , Cafe Terra Cotta, and Acacia. He has been featured in Tucson Magazine, and even drew attention all the way across the country in the Baltimore Sun for his chipotle flan. He was selected by Tucson Lifestyle Magazine readers as the creator of the Most Sinful Desert of 2004, and featured on the Great Chefs of America television series for his Ibarra Chocolate Souffle with Minted Serrano Ice Cream.
In 2011, Fabrice suffered a perforated ulcer and was hospitalized for two weeks. Complications arose, and he has been unable to work since, unable to walk without a cane, stand or sit for more than a short period of time.
In January 2014, Fabrice suffered another perforation and was again hospitalized. The good news is that the latest hospitalization and surgery corrected the prior complications, and he is again able to walk without a cane! He continues to improve daily!
But the nearly three years have been financially devastating. The couple has lived on Adrienne's income alone, trying to make a go of managing the ongoing medical expenses and day-to-day cost of living without seeking any assistance.
