Some of you may remember me as the founding operator of Jon's Street Eats, one of the first pioneers of the Bay Area's street-food scene. I sold Jon's Street Eats in the spring of 2011 to move to Napa and try to start a family with my wife. The past year has been a tough road of navigating through fertility tests and treatments and taking things off the table, such as dedicating my time to a restaurant or project of my own. Now that we have navigated through this challenge, it is time to focus on getting something off the ground.
$30,000 is the minimum needed to apply for an SBA loan that would cover a build-out and opening expenses for a small, modest, hands-on operation. I envision a Classic American Diner meets sensible seasonality, much like Jon's Street Eats approach: simple, familiar foods done right, at an affordable price.
