Open Lukkah's Vegan Food Cart
My name is Lukkah and my dream is to open my own food cart serving awesome pastas, soups and a variety of deep fried delectibles made from scratch daily using my original recipes and a few family ones as well.
The core menu will be soy free and everything will be offered in a gluten free version as well. Have you ever had soy free gluten free vegan jalapeno poppers? Or how about some light crispy onion rings? I bet garlic fries with ranch sound good about now. And I know you're dying to find out what a pickle popper is. I can make this happen and serve it to you fast and
affordably. Or if you prefer heartier fare try my roasted red pepper and eggplant sauce over penne, creamy garlic alfredo or a big bowl of pesto minestone loaded with all your favorite veggies. I'll feature a different pasta sauce every day of the week and an accompaning soup on cooler days (which in Portland is about 275 days a year.) While preparing lunch I'll serve a light breakfast of bagels with my secret recipe of herbed cashew cream cheese, possibly some savory scones, hot chocolate, lattes and mochas to kickstart your day. And with the help of my wife Christine, who is an excellent baker, I'll tempt you with cookies, cupcakes and other sweet surprises.
I think this is an obtainable dream. I've been cooking since I was a child. It's something my mother and I love to do together. I have experience working in commercial kitchens and the food service industry, as well as working independently catering events such as office parties and weddings. I love inroducing my creations to non vegans and showing them cholesterol free cruelty free cuisine can be more delicious than they ever imagined. I also like cooking for vegans and veg heads and blowing their minds because in my hands foods they thought they'd have to give up can still be possible and mouthwatering without compromise.
I plan to keep overhead low by mostly being a one man operation, and then pass the savings on to my customers. My goal is to offer fillings portions of desirable entrees averaging $10 or less including a beverage. I've been working since I was 13 years old and am proud to work hard for long hours if need be to earn my living and my dream. I've created a fantastic menu I think everyone will enjoy and invested my savings into an adorable 1953 Bellwood trailer that was formerly a cajun food cart. It's sitting in my side yard now as I make renovations. The money I'm asking for from donors would be to help cover renovations costs and opening costs as follows;
New tires for the trailer so it will be safe on the road, then registration, title and insurance costs.
Costs incurred from business registration and licensing.
Replace plumbing and flooring to bring it up to code and be better suited for a heavy workload.
Purchase a second deep fryer to be dedicated gluten free.
Purchase mixing bowls, measuring cups, kitchen tools and storage containers to be dedicated gluten free.
Purchase an espresso machine.
Purchase kitchen equipment.
Pay security deposit at a food cart pod.
Donations to help cover these costs rather than me taking out a loan will help assure I can keep my prices low while remaining financially solvent in the opening months.
