Hello,

This is Domenic with Black Market Beef Jerky.  If you don't know who we are or what we offer, then what are you waiting for?  Get off your butts and try some of our delicious, awe-inspiring jerky.  If you have tried our jerky before, then I thank you, and hope you are a loyal customer for a long, long time. 

The reason you are reading this is, simply put, we need your help. 

You see, Black Market Beef Jerky has really caught hold here in western PA.  More and more bars are interested in our product, as well as a major local grocery chain (McGinnis Sistes if you were wondering).  On top of that, we have major vending oppurtunities coming up as well as a partnership with local band "Smokey Bellows".

On top of all that, when we aren't busy making jerky, me and my wife Tina will be working hard running our new business venture, Black Market Catering.  We are taking all our combined food expertise and training to bring Pittsburgh and its surrounding region a great new option for any group or event. 


So this all sounds great at face value, but we have run into some minor road blocks. 

The first is that we are now having trouble keeping up.  We need better, bigger, equipment that can meat (you see what I did there?) our jerky making needs.  The most important thing we need is a larger oven, such as a combitherm oven, that can handle the heat treatment and dehydration process all at once and in much larger quantities.  Other useful items would include a meat tumbler, which is a fancy vacuum sealing barrel that helps marinate the meat in hours instead of days. 

The second, and much more important issue is USDA approval.  To fully be approved for wholesale, such as find our jerky in your favorite bar or grocery store, we need the USDA's inspection and approval.  We have everything we need, with the exception of one crucial piece of equipment:  A water activity meter.  These special pieces of lab equipment show the amount of moisture in a product such as our jerky and help prove shelf stability.  It's an expensive, hard-to-find, piece of equipment, and there is no way around needing it. 

There are also smaller things that fall in that "would be nice to have but not necessary" catagory.  I wil detail those later.

That is why I turn to you, my loyal jerky addicts.  Over time we would eventually be able to accrue these funds through our sales, but with the rapid growth and interest in our product, I wish to get the ball rolling as soon as possible.
