New equipment for Caveman Truck

My name is Shelby Malaterre, and I run Caveman Truck in Indianapolis. Caveman Truck is a gluten-free / paleo food truck on a mission to spread the real food message.
As I start my fourth year in the truck I would really like to upgrade some equipment to increase capacity. I simply have not had the reserve cash to purchase these items yet, and am turning to you for help.
The first item is a new propane fryer. When I first started out I did not even use the tiny electric fryer that came with the truck. I really wanted to focus on the healthiest foods possible. But being in Central Indiana, I was missing out on quite a large customer base by not offering fried items. So, I decided to fill that little fryer with coconut oil and drop some pasture raised chicken wings and organic sweet potatoes in. I coated the wings in a seasoning of my own that is all spices and no fillers or stabilizers. The result was some of the best wings I have ever had. I came to grips with the idea that providing a healthier alternative to factory farmed wings fried in omega 6 laden oils was a big step in the right direction for the market I serve. What quickly became apparent was how much people liked these items! So much so that I had to take them off of the menu at large events, because our little fryer could not come close to keeping up.
I have found a brand new fryer with great reviews from a locally owned shop for ~$750 with tax. Although used equipment may be slightly cheaper, new equipment is great because I don't have to worry about cross contamination with gluten as the entire truck is gluten free. I will have to make some modifications inside to fit this new equipment which will cost ~$200.
The second item upgrade is our food processor. One of the many things we use our processor for is shredding sweet potatoes for "bacon hash". This is the original dish I began selling at a farmers market when I was testing the Caveman Truck concept. I have gone through several small processors putting them through the paces and I know that we simply need a more robust unit. The Robot Coupe R2N is such a unit. This processor has continuous feed which will allow for making larger batches in less time. A new R2N is ~$950 with tax.
With these upgrades we will be able to offer more to our customers.
