Cake Thieves Gets Its Own Shop!

Hey there! My name is Lauren O'Connor and I run Cake Thieves Bakery!


THE BACKSTORY:

It all started when I was introduced to baking in first grade. Whenever we had family parties, I got to help my mom with dessert and became a champion mixer. Fast forward to age 10--I excelled at my sixth grade science fair, where, against my scientist dad's suggestion of a traditional potato-lightbulb or volcano experiment, I instead tested baking powder vs. baking soda in an incredibly scientific and ground-breaking project titled "Cookies: Flat or Puffy? The Difference Between Baking Powder and Baking Soda."

After my early succcess as a scientist, I started baking cookies for my freshman classmates and bringing them in just because I loved baking, but my mom was sick of spending money on things I baked for free. So I did the obvious thing a thirteen-year-old would do: started a business. I would take orders one day at school and bring cookies in the next. That is, until the vice-principal shut me down for being competition to the cafeteria. But don't worry, my new business partners at the time (my sister and her best friend) started the underground cookie trade in Immaculata High School, where my business secretly flourished. THAT is, until Sister Mary called up my parents and asked my mother if there was a "problem in the home." My mom, shocked, said, "No, why?" She said, "Lauren hasn't done her math homework in months."

Oops! I was too busy baking 400 cookies a night. Sorry, math homework!



Now I run my own vegan baking company called Cake Thieves. For the past three years, I've been running it out of coffee shops and my own small kitchen as well as crafting special deliveries. It's time for Cake Thieves to grow up and get our own space.



I am raising money to help with startup costs and build-out my very own space which will become Cake Theives Bakery, a stand-alone spot for all my vegan baked goodness, along with a coffee bar, run by my handsome business partner/coffee guru, John Cho!









We've found a spot in the Lower East Side/Chinatown and can't wait to be able to build out the space!
